Ingredients
- • 2½ pounds Yukon Gold potatoes (about 5-6 large potatoes)
- • 5 tablespoons anchovy butter, plus more for garnish
- • 1/2 cup whole milk
- • salt & pepper, to taste
- • fried garlic/onions, chives, for garnish
Directions
- Peel and quarter potatoes, add them to a large pot, cover with water and add a biiiiig pinch of salt. Bring to a boil over high heat and cook until potatoes are very soft, about 20-25 minutes
- Meanwhile, in a separate small pot over medium heat, heat anchovy butter and milk together until the butter melts. Set aside.
- Drain potatoes and return to pot. Using a masher or a ricer, mash hot potatoes until smooth. Mix in the butter mixture and fold until just combined. (You can add more milk or melted butter to adjust the consistency to your liking) Season to taste with salt and pepper.
- Transfer to serving plate and top with fried garlic chips/onions, chives, extra anchovy butter and fresh cracked black pepper.
